History
The Geisha variety, a rare variety, thrives in this unique terroir, where fertile  soil and a temperate climate create the perfect conditions for exceptional coffee. Introduced to the region in the mid-20th century, this variety quickly became a favorite among local farmers and exceptional cup quality. The farmers of Panama, many of whom are smallholders, tend to their coffee plants with a deep sense of pride and care, often intercropping them with food crops to sustain their families and communities.

Crafting the perfect cup requires attention to detail, as variables like roast date, bean storage, water quality, and brewing environment can influence the final result. Adjustments may be needed to replicate this recipe precisely, but the journey is worth it.

Method: V60
Grinder: Fellow Ode, setting number 7III
Water: Cleo mineral water
Dose: 16 grams of coffee to 250 grams of water
Temperature: 96°C

Brewing Instructions:

  1. Begin with a first pour of 60 grams of water, allowing it to bloom for 30 seconds.
  2. Follow with a second pour, adding water gradually until you reach 250 grams.
  3. Aim for a total brew time of 3:00 minutes.

This recipe yields a cup with a TDS of 1.32% and an extraction percentage of 20.33%.

When replicating the recipe, there are different variables that can interfere with the final result of your cup, such as the date of roasting, preservation of the grains, environment, water, etc. It is important to keep in mind that all these factors can influence and you have to make small adjustments when replicating this recipe.
