History
In the lush highlands of Karo, North Sumatra, coffee is more than a crop—it’s a way of life. For generations, the Sumatran people have nurtured coffee plants with the care of tending to family, their livelihoods deeply intertwined with the land. Arabica coffee, introduced by the Dutch, found its perfect home in the cool, elevated terrain. With the oldest processing method of Indonesia that is “Giling Basah”.

Crafting the perfect cup requires attention to detail, as variables like roast date, bean storage, water quality, and brewing environment can influence the final result. Adjustments may be needed to replicate this recipe precisely, but the journey is worth it.

Method: Aeropress
Grinder: Fellow Ode, setting number 4
Water: Cleo mineral water
Dose: 16 grams of coffee to 260 grams of water with a bypass 15 grams of water
Temperature: 96°C

Brewing Instructions:

  1. Begin with a first pour of 80 grams of water, allowing it to bloom for 40 seconds.
  2. Follow with a second pour, adding water gradually until you reach 260 grams.
  3. Once the infusion is finished we will add 15 grams of bypass.
  4. Aim for a total brew time of 2:25 minutes.

This recipe yields a cup with a TDS of 1.29% and an extraction percentage of 19.47%, highlighting the coffee’s melon, vanilla, and creamy chocolate notes for a truly indulgent experience.

When replicating the recipe, there are different variables that can interfere with the final result of your cup, such as the date of roasting, preservation of the grains, environment, water, etc. It is important to keep in mind that all these factors can influence and you have to make small adjustments when replicating this recipe.
